TAKIGAHARA CRAFT&STAY

Stay in a beautiful old farmhouse, converted to a temple of modern design. Japan and Scandinavia meet in furniture, artwork, and architecture. Local artisans create heritage crafts at our on-site studio. Eat delicious, fresh, organic food from our farm, or raise a glass at our natural wine bar. Come just to relax, or work remotely in a home away from home. Hike the mountain on our doorstep, try a hand at farming, go swim in the river. Meet a community of young people building a new village, a life closer to nature. Takigahara is a place we call home. We would love to welcome you.

Our dinners are made by Shunta Suzuki, sous-chef at Paris Michelin starred restaurant SOLA. The menu is constantly in flux, as Shunta visits local markets and farmers each day to hear which ingredients are in their prime. Following the French concept of ‘cuisine brut’, dishes are kept tastefully simple, with the natural flavours taking centre stage. This is the only place you can enjoy ‘cuisine brut’ in Ishikawa Prefecture, with fresh ingredients straight from the land and the Japan sea.

No less care is given to the food’s surroundings. Furniture by Zaha Hadid, Jasper Morrison, Achille Castiglioni, and the Kutani ceramic tableware of Keigo Kamide, the sixth generation craftsman of Uemide Choemon Kiln. Wine pairings are carefully selected by the chef himself, who studied brewing at Domaine de L’Alezan in the south of France, with flavour and sensation permeating the body in gentle waves.

Come and experience an approach to gastronomy that doesn’t exist in the city.

Dinner is ¥4,800 per head, tax included.
