Stay in a beautiful old farmhouse, converted to a temple of modern design. Japan and Scandinavia meet in furniture, artwork, and architecture. Our dinners are made by Shunta Suzuki, sous-chef at Paris Michelin starred restaurant SOLA. The menu is constantly in flux, as Shunta visits local markets and farmers each day to hear which ingredients are in their prime. Following the French concept of ‘cuisine brut’, dishes are kept tastefully simple, with the natural flavours taking centre stage. This is the only place you can enjoy ‘cuisine brut’ in Ishikawa Prefecture, with fresh ingredients straight from the land and the Japan sea.

No less care is given to the food’s surroundings. Furniture by Zaha Hadid, Jasper Morrison, Achille Castiglioni, and the Kutani ceramic tableware of Keigo Kamide, the sixth generation craftsman of Uemide Choemon Kiln. Wine pairings are carefully selected by the chef himself, who studied brewing at Domaine de L’Alezan in the south of France, with flavour and sensation permeating the body in gentle waves.

Dinner is ¥4,800 per head (¥5,800 until the end of January with chef Shunta Suzuki), tax included.
